« Guindillas en vinagre » is the Spanish trade name for young green peppers in vinegar — the same family as the Basque piparra: picked early, thin, mild, served whole on tapas counters. Lots are specified by length range, count per kilogram and finish (vinegar ready to serve, brine for processors). CAPERSMED grows and packs its guindillas in Fès, Morocco, alongside its capers, caperberries and piparras — same site, same traceability, same certifications; one container can mix lines. Capers held in vinegar. The acidity comes from the pack rather than from the recipe, which matters on a line that would otherwise have to add it. The sharper profile suits table condiments, sauces and retail jars, and the product stays shelf-stable without a cold chain.
